Sous vide duck breast

The superconducting sous vide (kitchen method that produces crispy, crumbly, smooth juicy meat inside) is served with duck breast caponata with a spicy vegetable ragout. Sicilian caponata is based on eggplant, capers, grilled tomatoes, grilled chicken peppers, and raisins. The green nuts found in the dressing, with red wine sweet and sour, give the food a velvety ripe flavor.
